
A simple search on the internet shows cake pop makers each have their own recipe, technique, tips, tricks, and I agree it can be overwhelming. I strongly recommend going into cake pop dough making with patience and an open mind. I truly believe what works for one person, won’t work for another, and we all experiment until we find what works best for each of us. It can be tricky until you find a groove. But once you find what works best for you texture and taste wise, it is smooth sailing from there on out.
Here is my recipe and step-by-step guide for vanilla and chocolate cake pop dough, since they are similar. Best part (in my opinion), this does not require icing added to the dough, therefore, the cake pop is not overly sweet!
supply list:
- Duncan Hines French Vanilla Cake Mix (for vanilla cake pops and funfetti)
- Duncan Hines Devil’s Food Cake Mix (for chocolate cake pops)
- 1 cup whole milk
- 1/2 cup sour cream
- 3 large eggs
step-by-step:
- Prepare the cake mix according to the box directions, BUT substitute milk instead of water, and use sour cream instead of oil.
- I find that milk makes it more dense, but moist. Using oil in cake pops poses the risk of the oil seeping out, especially down the stick, turning it yellow.
- Once the cake is baked (do not overbake!), remove it from the oven and immediately cover the cake with a clean dish towel. Let it sit for 5-10 minutes. This helps trap the steam, keeping the cake moist.
- Remove cake from pan, and put in bowl for stand mixer and mix on low. The cake will crumble, and then after a few minutes, will begin to bind together to form the dough, thanks to the steam of the warm cake.
- Covering bowl with the dish towel helps trap the steam in the bowl while mixing
- Immediately remove warm dough from bowl, and place on saran wrap lined with paper towels. Wrap dough, and leave it on the counter to come down to room temperature.
- From there, you can roll dough balls and continue with dipping, or place the whole dough ball in the refrigerator for future use.

- Make Duncan Hines French Vanilla Cake Mix as explained above, Steps 1 through 4.
- Once COMPLETELY COOLED, add cake back into stand mixer, or hand knead, adding rainbow sprinkles (jimmies) a bit at a time until your desired amount is achieved.
- Do not add these sprinkles while dough is warm! The sprinkles will melt and turn your dough an unsightly color!
